Yes, you could take something as new as a roller motor from a late 90's 5.0 Explorer and change the distributor, replace the manifold and all EFI components with a carb and carbed manifold. So don't rule out late model roller motors in your search.
If you want to go with a whole engine, the '87-'93 5.0 HO is one of the best. If a block is all you're after, you need to make sure you have a crank that will match the block. Pre-1981 302s had a two-piece rear main seal and used an imbalance factor of 28oz. while post-'81s had a one-piece rear main seal and ised a 50oz. imbalance. So you can't use a an early crank in a late block.
i have an 87 EFI motor with a carb setting on it right now. It's extremely easy if you have the stuff to do it. Not a fan of the EFI heads though. I switched mine out for a set from a late model 4v 351W
need to swap distributors too- you can run points or duraspark- but no EFI distributor, i went with duraspark because it's what I had. They also have HEI distributors for them from procomp for $100 brand new on ebay. That is my next investment. One wire hook-up. IMO EFI to carb is very easy on these 302's. I have done 2 in my life. EFI is nice but once it goes it's hard to catch back up with. I like the simplicity of a carburetor....probably will always prefer it.
