Wheezers do ~OK in trucks. They have enuf cubes to do the job. I have never been fond of 302's in trucks tho. Remember the entire drivetrain is a system that has to work together. If you change one portion then other parts will need to be changed to match.
why not just go get a 460? you can get way more power out of a 460 than even a stroked windsor, and you can stroke a 460 for about the same price... build a 545 like i am... no need to change the bellhousing too the 460 will bolt right up

$ for $ the 400 335 block will kill a 408 windsor....reasons: You dont need to buy the 4" stroker crank for the 400 and you dont need to buy aftermarket heads (2v cleves flowed roughly the same as gt40s). All you need to make the 400 perform is a set of pistons, an intake, and a cam/valve springs.
To make the windsor a performance 408 you need to buy: The crank, the rods, the pistons, heads (e7s wont cut it), a cam and an intake. The money you save could be spent to make the 400 perform even better.
But I agree, its your truck, do what you will...Spend the money to downsize your engine, and then spend more to upgrade it back to 400 cubes....or keep the 400 cube engine and go from there.....or if you must swap an engine, swap to a 460, it'll be cheaper and youll be bigger. And a built 460 will eat both
