On demo cars we just twist the 2 wires together after cutting off the plug. If you don't want to cut the plug off, you can use a jumper in the plug and tape it up.

I added a cut-off switch to my inertia circuit. Carb Guy said that since I don't drive Clyde a lot the bowl would dry out an leave varnish. He recommended running it dry or manually draining the primary bowl before leaving it idle (as in unused) for any length of time. I now shut off the switch and let it run out of fuel as I park it. Can also be used as an anti-theft device if the switch is hidden like mine is.
