I will add straight refrigerant as needed. I have added oil charge only when I believe necessary. One can overfill easily. I had a noisy compressor that quieted down instantly with oil charge. Normally this is not necessary. I have never changed an accumulator but a friends system had the dessicant bag burst. Unbelievable, about 10 tablespoons of sand entered the system. We cleaned it up, took 2 days, new accumulator and orifice and the system took off and ran fine. We never changed the compressor.
Oil/Non-oil: Having suffered through a 'black death' situation and subsequent A/C system rebuild, my personal theory is to add a 4oz can of oil/charge for each two times you need to have the system recharged. Ford systems have no way to gauge remaining oil and obviously if your system is leaking down, oil is being lost as well as refrigerant.
Brands: any brand of r134a - they should all be generic, therefore cost driven.
Oil: When I rebuilt my system, I purchased some from Arizona Air made by Texaco and I believe it was called "Capella-100", an ester based and 100 weight I assume. I have not had any leakage in the past 4 years the system has been in service and this is using the old hoses.
System prep: I did the full monty on the Aerostar: system flush, vacuum evacuation, o-tubes & accumulator with great results. On the Escort and Taurus just dumped in oil and few cans of r134a with okay/good results. Could be better if I were to take the time to tinker with them.
Ford adopted polyalkalineglycol (PAG) oils for I think all of their vehicles. Polyolester (POE) oils mix with conventional refrigerant (including R-12) better than PAG oils, but downside to ester oils is that they absorb moisture. Most MVACs use PAG. Refrigerant wise, Wal-Mart used to have Pennzoil brand refrigerant for cheap (made by Genetron aka Honeywell). Whatever is on sale is good. Premixed cans are convenient.
