Someone just recently posted a very technical and precise way to determine psi for a non-stock sized tire, but you'd have to do a search of this forum to find it. I personally use the chalk method. I go to a flat, level spot, draw a chalk line across the width of the tread and then drive it in a straight line until the chalk line gets skewed. If the line is skewed evenly across the tread, your psi is fine. If the line is skewed on the outside edges your psi is to low. If the line is skewed in the middle, the psi is to high. Not the least time consuming and accurate method, but it does the trick.
