I changed the oil for the first time since I have owned the truck and the pressure is noticeably lower. I am running 10W-30. No clue how many miles are on the engine, it does use a little oil. Will running a thicker oil, 5W-30 bring the pressure back up? What about adding some Lucas?

5w-30 is thinner than 10W30 I run 10W40 in my truck and get about 60pounds@3000RPM what are you getting? a FE 360/390 only needs 6psi to idle according to the original Ford engineers, but that only applies if it picks up immediately with you goose the throttle.
