I am eventually going to put an offy with a holley 390 cfm with efi exhaust manifold. From what I have read this is a great combo for the 300. I would like to put a mild cam in also, but don't know which one to go wit

All make cams for the 300.
I'm running the Comp 268H, it's not considered mild though and probably wouldn't work well with EFI.
I do love the lumpy idle.
