The engine computer uses it to adjust the engine idle when the throttle is closed. If it's gunked up, it can stick and cause the engine to stall. Look for a silver cylinder mounted above the thottle body. It's attached with two screws and has one electrical connector.
The IAC sticking is a fairly common problem, causing the engine to die at idle or not to start unless the accelerator is held down slightly. There are many other things that could cause the engine to die, but unless the PCM throws a code and turns on the check-engine light, I would suggest cleaning the IAC with throttle body cleaner as a starting point.
