need carb help please

i have been trying to get my truck back right so that i can go play in the mud but the carb is screwing with me. I put a new set of plugs in it and took it down the road and it fouled them out. The choke stays open all the time and when you push the flange down it has better throttle response. It has an electronic choke. But would like to change it to a manual. It blows out black smoke. So my question is...How can i adjust it from running to rich? and How easy is it to put a manual choke on it? the number on the carb is (6R7809) if this is the right number

It sounds like a Holley carb, in order to help we need the List number from the front of the choke air horn. Remove the air cleaner and it is in plain view.

It also helps to know what the truck is-AT, manual, engine, etc. Has anything been changed since last running well?
