I am a truck driver and even when a truck passes me in my Kenworth i get that sway from the other truck pushing so much air. It is some thing you will have to learn to compensate for.
As for adjusting the ride height, That is one thing that really bothers us truck drivers is head lights pointing up into our mirrors. If at least, try and adjust your headlights down when your towing, 1 for safety (so you can see), 2 for safety (so we can see), 3 fro safety (so the oncoming driver can see). You see, It's all for safety!
