Hello all,
I have a 1965 F100 shortbed with a 360 V8. I am not happy with the performance of my 2 barrel rebuilt carb. I would appreciate any recommendations for upgrades without changing my stock intake manifold.

Howdy, and welcome to the site!
I'm assuming you have the autolite carb. I've got it as well, and while its quirky, its reliable. Holly and Edlebrock do have some options for you, but not many. the problem you'll run into isn't the carb, but the intake and exaust. That Autolite is doing about the best the rest of the system can handle, its breathing and pumping gas as well as the engine needs. $400 for a new 2 barrel Eddlebrock and another $50 in jets and some weekends tuning might buy you 15 horsepower. As far as the carb is concerned, the number of barrels almost doesn't matter, its a matter of CFM. But on the intake side, a 4 barrel intake breaths MUCH better than a 2 barrel, and can use the carb better.
That same cash would buy you some cheap headders, a 4 barrel intake, and an addapter plate for your 2 barrel carb, and give you 35-40 horsepower, plus the ability to do more later, if you decide.
thats just my oppinion. Over on the FE engine forum, further down the page are some people who know much more than I do. you might want to re-post this there and see if they can help ya.

I have to agree with beater, the ol FE is pretty spunky and will pull like a train. It doesn't rev fast in stock app. but it will take a nice chunk of change to make a hot rod.

You've got a 360, which tells me you have a newer engine, so does the carb match the engine? If it's from an emissions-era donor, then the carb may not be the best.
I have the original FoMoCo 2bbl on my 352. It is a wonderfully simple and reliable carb, and driven with a light touch, can return 15 mpg or better. If you have an emissions carb on yours, you may want to back date to a 352 carb.
Adapter plates are a band-aid, and I never recommend them.
If you're going to change, you'll have to get serious and spend the money on a good intake and 4bbl setup. Intakes are not hard to find used, just make sure the threaded parts are in good order. I like the Edelbrock/Carter carb design better than the leaky side-bowl Holleys for myself.
