Unhappy Dazed and Confused

I have an 83 Ford Club Van with a 300 in6. It had a four speed overdrive top load trans. Rebuilt it twice and was too weak so I repaced it with a c6 automatic. Stock tires were 225-75r15. I now have 31X10.5 15's. I have a 3.00:1 axle. Before I put the c6 in, I was getting 17-18 mpg with big tires. Now my rpm run 2450 at 70 mph. You can watch the gas gauge drop. When I drive around 55mph, rpm (2150) I get decent milage. If I change ring and pinion to higher speed I will not have any power. I use it for hunting and daily driving, so I would like to be able to tow also. Would anyone have any sugestions on what ratio I need to put in the rear axle or should I just stick with what I have now? I would like to still get decent mpg and be able to drive the speed limit. Any advice would be welcome.
