Between a 400 and a 302.....I would go with the 302 (EFI?) over the 400 if the engines were stock. The 400's are dogs unless you tune them up. And if you want to do mud racing, your going to be much better off withg a high RPM engine that can run at 5000+ RPM's easilly and still make good power there like the 302 does. A stock 400 just can't do that. You shouldn't be concerned about the low end torque since your going to be spending the race in the top end anyways.
Best way to go would be the 460. Its going to make enoufgh torque to run at least 1 gear higher than what a 302 would, and still have a good RPM range. It might not be as high as the 302, but the extra torque with the higher gear will more than make up for it.
I only suggested the stroker kit because it will give you a lot of low end grunt, and give you an easy shot at the numbers you're looking for. As far as engine kits are concerned, stroker kits aren't outrageously expensive. Worst thing I've heard about 'em is you may have to rebuild the engine more often because of the increased spinning mass. Whichever way you go, the windsor is a good starting base.
I'd get a good core like dave sez, then so what tuning you feel comfotable with. If you feel a dificiency, you've got plenty of potential. Upper end lacking? different cam, performance heads. bottom end lacking? stroker kit and parts to match. Doing things in stages will allow you to cover some cost, and get the engine you want.
thanks for all the help, i probably am going with the 351. i have a friend with an efi 351 from a '92 bronco i am gonna see if i can get. that stock engine with a few upgrades should be good for me. thanks again.
If you are afraid to run a carb because of hills, holley has the new avenger series for trucks that are almost as good as EFI while offroading. i use the word almost sparingly though. it still isnt as good as having fuel injection, but it still works well from what i have heard.
