Water temp
The 2005 does not really have a "water" temp gage. The computer controlled trans and engine temp gages on the right of the speedo are just a little better then idiot lights.
Adding a true water temp gage will give you a feel for how the motor is doing in real time. When you see it climbing fast you can take evasive action to stop the over temp. With the Computer controlled sensor CHT (Cylinder Head Temp) you don't get much warning. One minute it is in the green the next she is over temped in the RED.
Unfortunately this means that Ford does not already have a sending unit in the water up around the top front like they used to have.
Today is very wet outside(finally) so I am not inclined to go lay under the truck.
From memory: On the back side of both cylinder heads, and in a terrible place to get to, are several hex head "plugs". I bet money one or more is an oil passage and one or more are into the water jacket. They are about the standard size that most NPT (National Pipe Thread) sending units would be, so it is just a matter of finding one that looks like the size your sender is and pulling the plug. Either oil or coolant is going to pee out.
I also know that on both sides of the block...a little easier to get to are some more of those plugs. Look to the rear a little and slightly above the large "adapter" that the oil filter spins up onto. You will see a shinny silver "plug" recessed into the black cast iron block. Same deal, it is either oil or water passage.
Careful with the ones on the block, do not remove with a hot motor. Fluid IS going to pee out and in the case of coolant, a LOT of it unless you are ready to stick something back in the hole!
For what it is worth, typically these passages on the block are not a good place to get a good oil pressure reading. (some can be but most are not). If you need oil Pressure you need the back of the head oil ports.
By the way, I have towed up and over the tallest, steepest passes in the U.S. and the factory cooling system on the 2005 never got hot. This was not the case with my 2001 version with the smaller radiator and 4R100 auto trans. The 5R110 has a temp control valve, in line external filter, and larger liquid to liquid cooling core inside the radiator. ( the little external cooler in front of the radiator is for the power steering fluid).

I know exactly where you are thinking cuz that was my location on the Platinum (01 version)
Put the engine oil temp and the oil pressure sending units (one each side) in the oil gallery plug on the back of the heads. Want to move the oil temp down to the pan, but what a PITA. Someday.
Put the trans temp sending unit down in the (aftermarket) trans pan. Works OK there, but it's a little close to the exaust pipe and not as reactive (fast) as the test port.
Don't know any thing about boost. what kind of boost would that be?
