Does the 97 psd have a map sensor?

yes it on the heater box on the passenger side of the engine compartment

When a chip is added, will high boost trip the sensor and defuel the motor?

yes it will. there are a few sites that sell regulators you can install inline that fool the regulator and not let the computer defuel. i think black cloud and itp are a few but other will tell you more.
