After a brief consult with the wife, it has been decided that we will be having roasted veggies over a pork tenderloin with pasta. For desert it will be nanner pudding and some kind of spice cake.

Try this at home:
-put 2 cans of Hormell chili into a large bowl and add a block of velveeta cheese cut into small squares, microwave until it is all melted, stir it up and continue heating until it is hot enough for you. We like it with traditional tortilla chips, but it is pretty good with fritos, too.
Really unhealthy, but sooooo good!!

My *personal* modification to the above:

*Replace Velveeta with chedder (sharp is suggested)
*Dice up any left over steak or roast into approx 1/2 - 3/4" chunks. Add to the pot.
*Add some onion, cut into 1/4 - 3/8" pieces
*Add jalepeno peppers, canned or fresh.
*Add chili powder for more flavor
*Cayanne pepper to achieve desired heat level.

Warm on kitchen stove, approx 10 - 15 minutes. Stir every now and then to distribute melting cheese.
