So, the X is the right thing to go with and it is a fitting that a competent muffler shop will fab or have on hand when I bring in my truck.

It's not really a fitting. Any muffler shop should be able to make one up for you easy. I just went with an "H" crossover as it was easier to make given the amount of space under my truck. The other option would be to do a 2 into 1. In that the headers both "Y" off into a single outlet pipe. Usually that single pipe will be larger. What headers did you go with?

If you have any links to graphs/charts showing the HP and torque differences between the x-pipe and H-pipe, I'd like to see them. That's interesting about the difference, I had not heard that before
