oil weight question

A response to a few posts here.
A 5W-30 oil means it performs like a 5 weight oil at cold temps. (First start up)
Then performs like a 30 weight at operating temps (around 200)
So I pick my oil viscosity by the second number.
The higher the 1st number I would let the engine warm up a littler longer before seeing very high rpms.
