Don't the motor mounts bolt on and off from the mounts welded on the frame. If so then all i would have to do is bolt my 302 mounts up to the mounts on my frame correct

Nope. You have to change the frame brackets. After you change to v8 brackets, then yes, all the different v8 motor mounts will bolt and unbolt.
Some people have the opinion that the six is a more suitable engine in a truck than the 302. If you think about it, there is not much difference in displacement between 300 and 302.
So the difference is the six is a low rpm long stroke engine for better pulling while the 302 is a shorter stroke higher rpm engine.
It all depends on what you want to achieve with your truck, but I have to admit I had a 302 in my 4x4 long bed 1980, and it was barely enough when pulling a trailer sometimes. I have a 351w now it is way better pulling a trailer than the 302, all things being equal(gearing, etc.).
