yeah, come to think of it R4E's right, a 650 is a bit big. You might need an engine build for that. I like holley for longevity, but like R4E said, it's a matter of preference mainly. sorry for the mis-info.
It's hard to make a mistake as long as you get a carb with vacuum secondaries. They make the carb kind-of "self adjust" a little bit. If it's too big, they just won't open as soon as a smaller carb.

If you are going to keep the stock carb, I would not touch it. The factory has a delicate balance, and taking certain things off can throw the balance out, making it run worse than it did.
You can get rid of all the stuff on the engine, if you wipe the slate clean. This means getting an aftermarket 2bbl or a aftermarket 4bbl with a new or used 4bbl manifold. These carbs are not calibrated for emissions, so you can take all the extra stuff off the engine.
If your distributor has a vacuum line going to it, your vehicle is not computer controlled.
