It could be that your truck may have a vacuum leak somewhere.

Or you got an exhaust leak somewhere.

Either one would also create exhaust popping when decelerating with engine power.

My 68 360 FE came with headers and wore out cherry bombs and it poped, headers 2 1/2 ft of pipe and bombs. Got 2 used 93 corvette mufflers on ebay under $20.00 with shipping, these mount at the end of your pipes, big square tip had a local shop run the pipes from the bombs to the mufflers so quite and the back pressure helped motor
