Are those rear-view mounted gauge pods available in 3 or 4 pods. I may add volts, amps, oil pressure and transfer case temp or something else if there is room. The interior may look a tad cluttered with a 4 pod on the a-pillar as well.
What do you guys think?

IMO the more gauges, the better it looks.
Volts, amps, oil pressure and transfer case pressure sounds pretty good. You might consider transfer case in conjucntion with front and rear diff temp, if you do alot of off-roading.
I had two installed over the life of my old 99, the first one was placed by the rear view mirror and the second (Clifford) was placed closer to the dash on the drivers side. It worked, but I wondered because sometimes the Clifford didn't connect with the two way key fob. The old one almost always worked.
heavy assault, do you think it is possible to drill and install the fitting for the oiling system into the side of the oil filter housing or would that be picking up unfiltered oil? It looks like it would be simple to drill and install the fitting (or a different fitting) on the oil return line to the fill spout? That would eliminate your need for a wrench. I am considering an oiling system like yours but dont like the plumbing.
I would not suggest you drill into the housing. I would think that ends up being a bit more expensive to replace then just the cap. I'm sure I can find a swivel that allows the line to stay connected but then I would need a (36,37??)mm wrench to get the cap off. Do you know how big the wrench will be for that size? Craftsman doesn't go that big at the stores.
I don't think it would matter if you get pre-filtered oil or post-filtered oil going to the by-pass filter since you are filtering the oil twice anyway.
I'm not running a pit crew where the oil change time is an issue. I still need a rachet with a socket to get the main oil cap off to replace the filter.
I bought a nice strap wrench in Sears, aluminum handle 1in. wide strap. Perfect tool for the job, and would eliminate the need to disconnect the oil line. That's if you use a swivel fitting.
The filter housing cap(on mine) doesn't have the swivel type fitting, I do have the swivel fitting on the fill cover. I don't have any other suggestions to help prevent the line from being disconnected using a wrench.
I'm going to call OilGuard to inquire about the swivel fitting. Mine didn't come with one, and it's a pain every time you have to remove the oil fill cap. I don't see why you can't use the same fitting on the oil filter cap.
How well does the gauge pod hang above the mirror? Is it pretty stable? Reading on the DPPI site they say it is mounted with mushroom tape, I wonder how well that holds up over time. Three gauges with wires weighs a little bit and these trucks tend to bounce around a little bit. I like the looks, just worry about the long term and having the gauges fall down on me.
