Yes i have put the 31's on my 79 onto my 77 2wd to see it they would fit. It was pretty close but i dont think it would rub unless you jumped it or otherwise bottomed out the suspension. I didnt get to drive it though, because my 77 dont run no more.

They don't rub at all. I've had 31x10.50 tires on 15x8 rims on my '73 F100 2wd with stock suspension for over a year now. It looks great and drives good too - I'd never go back to stock tire size now... Check pics in gallery. I've got a friend with 31x10.50 tires on 15x10 rims and it looks terrible, makes the tires look skinny - so don't go wider than 8" rim.
