The 360 was a torque monster, but the 390 was even more of a torque monster, if that makes sense
The 360 will be quite capable of doing anything you want, if it's in good shape and tune.
My '74 highboy came stock with the 360, my brother rebuilt it and I got it with about 100Kmiles on the rebuild (so, total 220K on the truck at that point). I ran it another 60-70K miles and HARD and it never died... took it apart and it looked like it had 50K miles on it. Replaced it with a 390, but that's another story
Good luck with it, take it one piece at a time, and it'll come back to some of it's former glory.
