I was wondering if headers will change the torque curve? Will a header raise my peak torque of 2600rpm to something higher? Also do they raise engine compartment temperatures?

Shoties don't affect peak torque/ HP I've heard but Everyone that has switched from stock to these has said it felt like more power-Yes they increase engine compartment temps- But there are ways around this like fiberglass tape this is what i used and silicone spray-.
Long tubes give less torque but more HP by lenthening the peak. example from 2500-6500. and all Headers will give you more Heat but way better flow. -Bob
Long tube headers will give you more low end torque not what was posted above. To "lengthen the peak" you would need unequal length header primary runners vs equal length primary runners. If they are new get them ceramic coated inside and out, they will last many years and keep the heat in the headers were they do the most good and not the engine compartment. Oversize exhaust piping will lower low end torque but make more power and shift torque to higher rpm's, small tube for normal street rpm range of operation. Mufflers have an effect with low end torque also. From the air filter to exhaust tips the whole system must match the motor and it's intended use.

That's ok Bob, half my life i've been backwards. Wrap on steel headers will shorten their life by many times, wrapped stainless I don't know but it may cause cracks. Headers that are coated will hold the temperature and velocity high which helps scavenge the cylinder as well standard uncoated headers.
Anything is better than the stock log manifolds as well a free flowing exhaust system. Now too large and lowend torque will drop off, another story there.

All shorties will do is open the exhaust up a bit more, they will raise the power up in the band higher too but its usually fairly minimal. For the price I would go with long tubes.
It took me 5 months before Thorley did another FE header run to get raw headers without chrome as chrome will go away as like paint, only a "good" ceranic coating in/out will last. There are bad ceramic coaters like Jet HOT ask me. Besides I wanted to clean up their welds, round over sharp edges, check for fit as well clean up the ports and match them to the heads. Only when satisfied had them coated.
