I am using a 2000 watt inverter with two GC5 golf cart batteries in series. I have a camper isolation unit between them and the truck alternator. I run a deep freeze off the inverter driving between the fish camp and the house to make sure the fish stay frozen. I use a portable generator to charge the GC5's at the fish camp if necessary.
I know a couple others who have the same set up. The batteries in your truck and or Marine batteries don't have near the capacity of the golf cart 6 volt batteries in series to provide 12v. They are a little spendy but if you want some real capacity they are worth it and they you aren't going to fry anything in your truck. Any accessory, camper, camp trailer, etc will put a little more load on your alternator which will wear out it's brushes faster. The isolation bridge will protect the rest of the system.
Bottom line the more capacity your batteries have the more operating time you get using the inverter.
And if your using 2 batteries it doesn't matter too much if you go with 6-volt series or 12-volt parallel. I went with 6-volt like AKDieselMan. When I need power, I need power. Mine is for Hyd. backup on my bucket truck. And yes, I have been stuck up in the air. It sux. Never again!
