would I use a 351 flex plate to get the 28oz balance?

No, you will have to get an AOD flex plate for your vintage 302. The AOD plate is shaped slightly different from a regular flex, and the engine requires the weight to be specific for that engine.
Old starter will work, a 3.75 would be a good choice for the 302. Later EFIs went to 3.55s but the EFI makes more power. Not sure about connecting to a Edelbrock, but you should be able to make it work.
So John, if I got a flex plate from a 351 that was bolted to an AOD, that should work for me, right? It would have the 28 oz balance, it would bolt onto the back of my 302 crank but would it have the right diameter ring gear?
