Anyone out there a beef jerky fanatic? I love the stuff. Bought my American Harvest Snackmaster dehydrator about 15 years ago so I could make the stuff. Started making ground meat jerky awhile ago. Stuff is great. You could mix darn near anything in the meat and it taste great. Hey, home brewed beer, homemade jerky, a good vehicle, etc.; is life good? You bet your ****. Have a story/recipe you want to share ?
Beef jerky totally got me through my tour in Iraq. It's all we asked for from home!!(well, that and booze!) It's perfect, our cargo pockets were always stuffed full of it when we were out on patrols. You can just graze on it all day, and never need to sit down and eat a big meal. The salt in it really helped in the heat too. Nature's perfect food.........

i love it my kids love it, used to buy some mail order from a company called KING B jerkey man that stuff was good. they had shredded jerkey that came in little cans like chewing tobbacco cans.
I like beef jerky a lot...but I LOVE elk jerky......I even had some buffalo jerky not too long ago that was REALLY good. I was driving from Spokane, WA to Cour D'aliane Idaho and a woman was on the side of the road with a stand...I think her name was Sue if any of you happen to drive that way.....

Get yourself one of those Little or Big Chief smokers from Lurh Jensen or other brands.
Then try a few of the soft jerkies.
I usually use chuck trimmed of fat marinated in something like a teriyaki marinade.
I cut it in maybe 1/4 inch thick strips and then I string them on a bamboo skewer and hang that from the smoking frame. This way you don't have to mess with cleaning the grid and you can make more jerky at a time. I like the lighter woods like Apple and Cherry. Somtimes Hickory is good but can get strong.
A hint, slightly freeze the meat before slicing with a sharp knife. This is much easier than using room or refer temp meat. I also use heavy duty zip lock bags for marinating since there is no cleanup after.
MMMMM.....Jerky. I would have to say it's the only reason I hunt deer. If I could process the whole thing into Jerky, I would never by meat from a store again. Elk, however, need not be made into jerky, but that's another post.

I always loved jerky for road marches. Good stuff.
BUT - I bought some from a vendor (well known local vendor) at a gunshow a few years ago.
I ate some. . . . got really sick about 6-8 hours later. REAL sick.
Wound up in the emergency room.
A friend that also bought some from the same guy, got REAL sick, too.
We believe that we got food poisioning from it.
THAT horse is one horse that I won't climb back onto. It may be all coincidental, but, I ain't takin' no chances.
The only jerky we will eat now is from a package. Sealed.

That's why I like to make my own jerky. As for vendors; watchout. I never had a problem with the packaged stuff, but who knows what's in the ingredients. You have control when you make your own.
I think I'll make my next batch with either jalepenos, habeneros or maybe a little tabasco sauce.
