exhaust upgrade?

My '87 Bronco needs to have the 351w motor rebuilt (again) and it also needs a complete exhaust system. The old system is stock with Ford muffler/ 2 tail pipes. Head pipe to tail pipe is either cracked or rusted. Since I need to replace the whole system anyway, I'm thinking of going the extra mile and maybe installing headers and flowmaster CAT and muffler at a cost of around $370 plus crossover, intermediate, and tail pipe. I've been told, however, that headers will make the truck run cooler (we live in Maine)and, for the cost involved, not substantially improve fuel economy. What is everyone elses experience with this type of setup? If I do go with headers, should I bolt them to the engine prior to dropping the motor back into the truck? Will I have to re-jet the 4v carb? I'd appreciate any thoughts as to whether to header-or-not. Other than the exhaust and maybe a K&N filter, I don't forsee any other upgrades...looking primarily to stretch fuel. Thanks.
