For the leather I use Tanners leather cleaner and conditioner they come in two different bottles.
For plastic, rubber and vinyl inside and out I use Son-Of-A-Gun. I used to use armour-all until a friend detailed his show car out and when he took it out of storage his tires were checked and cracked like it had set outside for years and his dash was crack. I have heard this happen many times because if you do not constantly use armour-all it will dry things out. I have not had any troubles with Son-of-a Gun and I dont use it but just once in a while.
tanners is good and so is lenox. stay away from minkoil it will ruin your leather over time it doesnt allow your leather to breath and it rots the stitching. i repair saddles and have seen alot of them messed up by the use of minkoil . saddle soap is great for cleaning leather also be very careful with suede make sure what you use is for suede alot of the products out there will discolor and gumup suede
I like using Zymol for the vinyls and plastics. it leaves a semi gloss shine and seems to clean pretty well too.
the Maguires leather products do a good job.
I am a big fan of all Meguiar's products. There leather cleaner is nice but leaves my leather feeling slightly sticky. For my dash and leather I use F21. I think it's called Formual 2001 by Turtle Wax. Comes in a green bottle. Looks great on my dash and leaher.
