I've done a lot a ceramic tile installations, both floor and walls, but I've never done granite, the wife picked out granite, and because I never done it before, I'm a little apprehensive to say the least, I know that with granite there's no room for mistake like ceramic, so with that said, if anyone out there as any pointers or advice, it would really be appreciated.

If you have a good diamond blade tile saw you wont have anything to worry about besides the usual that you would with ceramic.
I actually like laying granite better than ceramic because you normally have very small grout lines with granite and in my opinion its easier to keep everything straight, with that being said there is less room to 'fudge' in any error from the room or cabinets or whatever else being out of square.

If you are laying 12x12 make sure your floor is perfectly flat and you will save yourself lots of time. Big tiles get off kilter when your floor isn't flat. Spread thinset evenly, but you really need to make sure you have complete adhesion or else tile will break. So install and remove to make sure all of the tile is covered with thinset. Often you will need to butter the back of the tile with a thin layer to make sure you get complete adhesion on less than flat floors.
