I did a 4x4 launch in my 6.0, after that my fuel gage has been stuck at the full tank level for almost a week now, I'm too busy to bring my truck into the dealer, anything I can do without removing the tank?

I'd try a really bumpy, (off road), road with about a half a tank of fuel. Sounds like the float for the sensor got stuck in the full position.
Or just fill the tank all the way, it might just jar the float so it moves.
I haven't removed the tank on one of these, but the sensor/float should insert from the top of the tank. Dropping the tank a bit so you can loosen this, and jiggle things might be enough for a correct reading. Else I think you can lift the center section out of the bed and get to it that way. Might not be nearly as bad as taking the tank out.

My 03 did the same. Your fuel sending unit has the old float version, an update is available.
Ford did warranty the sending unit and my dealer added a fuel filter change since I had concerns about disturbing the tank. FMC did not return the claim on the filters.
Make sure when you order the new sending unit, also order a new tank seal because it is a seperate item and needs to be replaced also.
