Just an update.. Since the truck is back from the shop, it runs like normal, so I took it out for a drive. When I returned home, I opened the hood and found that the coolant had been spewing again (it was at the min level when warm).
I'm going to keep an eye on it and see what happens. If it continues I will take it in again and see what happens.

This sounds very familiar. I had my 03 Cobra flatbedded 6 times before
they finally bit the bullet and put in new head gaskets. First they said it
was the cap, then they changed my heater core twice and add 2 more tows
for thermostats. Turned out to be the gaskets, but by that time I had no
trust in my car so I ditched it.
By the way they pressurized the motor 5 or 6 times, they never
believed it was the gaskets till they pulled the motor.

My fan clutch went out too. Luckily I never saw the temp gauge move (but that takes alot), I just couldn't get any cold air from the A/C, no air across the condensor. I have a company truck that had a fan clutch go out too. Hmm, something new to watch for maybe? Wish I had those new gauges I want so I can see the real temps. Good luck with the spewin. Mat

Mine 2003 did that when new. I did not add any fluid and the level has been at min ever since. I now have 71K and no more has come out. Maybe it just like the fluid level at the min in some trucks.

Do you know it was actually spewing again (i.e. the engine compartment was damp)? Because it *should* be at the MIN level right after it's been running, then as it heat-soaks some of the coolant will return to the reservoir. Sounds like you might be fine now - check the coolant again the next morning when it's cold. As long as it's still between min and max then everything is OK.
Early 6.0 trucks were routinely overfilled from the factory, so they would often spew coolant when shut down, until the level got down to the proper level.
also along those lines, when they replaced the thermostat- normally there is air in the system so if the level went down this would be normal as it is getting the air out of the system. Just keep an eye on it. glad it wasn't more
Mine did the same thing. It started out just happening while towing up long grades. Then it was every time I towed. Now it pushes coolant everytime I drive it. The dealer changed the radiator cap, fan, thermostat, and coolant bottle. Those changes took 4 trips back to the dealer plus 2 other times when they said they couldn't find anything wrong.
I dropped it off today, now they say Ford tells them the heads are bad and need to be replaced! The truck is 6 months old and has 14,000 miles on it. This problem started at about 5000 miles.
