I've heard that many people think Cajun food is just spicy hot and it's not really. It's a balance of basic spices....salt, black pepper and some red pepper or hot sauce. That's all, not much else. We also use alot of chopped onion, bell pepper and garlic.
Some people will confuse Creole with Cajun. Creole uses a lot of tomaotes in their dishes. Gumbo should not have tomatoes in it in my opinion. Okra does.
Roux goes in stews and gumbo's. Roux rules!
I need to make a Gumbo...It's still cold enough down here, 60 deg F.
