Welcome to the wide world of old Effies! You are now officially connected to the nicest, most knowledgable, most helpful, and craziest group of folks I've run across on the web. Seriously.
With respect to where you can get parts, here is a partial list. Other folks will chime in with their favorites as well.
Welcome to the 'Club'! As reference, I had my truck shipped on an open trailer from just north of Chicago to Raleigh, NC for a cost of ~$650. The shape my truck was in didn't dictate the need for an enclosed trailer.
I'm originally from Lexington, not to far from you.
Good Luck!

Ebay is another source for parts; there's a lot of parts on these trucks that aren't being reproduced (body and cab), and Ebay is the best place to find some of the NOS parts that are floating around out there.
Most of the chassis parts (brakes, suspension), can still be had from regular auto parts stores.
Classic Performance has some '57-60 parts hidden in with the '53-56 truck parts (brakes and steering).
