I went through this on my 83 just a bit ago. It had the Motorcraft 2100 carb.
We bought a GT Sorenson (or something like that) kit from autozone. They had 3 or 4 at different prices and we bought the 2nd cheapest. Turns out the more expensive kits work too, they just contain more parts to replace (springs, gaskets, etc.). Price for mine was around $35
(note: the gaskets in this kit work, but are really cheap. I had one break on re-dissassembly. I would advise another manufacturer for the carb rebuild kit)
The rebuild wasn't too bad (i'm not a mechanic...actually this was my first major car repair). Make sure you keep all the little parts somewhere safe (ziplock bag, etc.) and go slow. If you think you're not going to remember all the steps rebuild the carb with the old parts and do it again until you can.
You will probably also want a can of carb cleaner, some form of compressed air (I used the computer keyboard air cans), some rags, and probably a "gas safe" sealent (non-silicone) that isn't a super-hard setting item.
I did not dissessemble the choke housing (only removed it). The choke housing gets in the way of the backmost starbord nut that holds the carb to the spacer/intake. That nut is a bitch to work with, so be careful not to break the pull-off or choke.
There is a web page on motorcraft carbs that another FTE person put together, but I just deleted the URL yesterday. It may be posed in another thread I had started in this forum regarding a vacuume leak problem I had after the carb rebuild.
