Make a billet side cover for that 300! If you plan on going in to machining as a career, there's all kinds of tools you can make, if not, make stuff for the car repair hobby. I am a toolmaker, but I make hobby stuff too, such as a gasoline engine that actually runs! The home machinist's magazines have lots of stuff like that.
Torque plates for various motors, this is about 1" thick steel with openings for the cylinders and reccessed head bolt openings. This way you can bore out the cylinders, and hone them as if the head was bolted down, taking care of any distortion. Tools are always good, but, not always challenging, how about an EFI intake for an FE engine??
You ought to make a tesla turbine. They're really cool, easy to make, and almost nobody has a clue what they are. It would be a good way to get extra credit in class.
