I have a Holley one-barrel on a 223 in a 58 F-100. The engine runs great at idle and in 2nd and 3rd gear and 1st gear if the truck is pointed downhill, but stalls out if the truck is starting in first gear on a hill or under a load. I have to burn the clutch to get it going.
I have been told this is an acclerator pump problem. It doesn't appear there is any way to adjust the accelerator pump. This is a fairly new replacement carb that is the same model as the original.
I had the same problem with mine.. After rebuilding it twice I ended up just replacing it.. Sadly the accelerator pumps walls where just to worn and the new pump body just couldnt push enough fuel to make it work right.. I did find a good used one at a local yead tho.. and I got it for $10 :d Best of luck with urs.. If U need the model its a 1904
The accelerator pump has an adjustable linkage. There are three holes where it can be connected to the throttle. If its not already there try moving it to the hole furthest from the pivot point to give the pump the longest stroke. [edit] I just noticed you have a 58. I was for some reason thinking an earlier model. May not be the same.

The truck could be running rich also have you checked the spark plugs color? I once had a vehicle with the same symptoms. Have soemone with a gas analyzer check out the truck. The money saved in correctly diagnosing the probelm will usually pay for itself in parts.
