On the other website, there is discussion that an aftermarket air intake
(AFE PG7) will help reduce egt's. This is my first diesel, so will one of
you diesel wizard's please help me understand how this is possible.

Your stock filter is fine. A filter like K&N that uses a coat of oil to maintain the filter ends up putting a light coat of oil in your intercooler. I had the fine enjoyment of watching a Dodge intercooler being replaced because of the long term use of a K&N filter.
Not really, haha. The other website and you know which one really pushes
these filters and intakes and claim to lower your egt's. I was wondering how
they lower you egt's.

A better intake is one that draws in cooler air. CFM is a factor. A 6.0L is fine stock. Zoodad did a mod to the front cross support that removed any blocked air.
A larger exhaust with mandrel bends is what you want to remove high EGT"s
