Are you keeping the sound from getting out or in? I think my old 92 F150 was well sound-proofed, Ford used alot of padding behind the bench seat and under the carpet, although the headliner is thin overhead. Sheets of material probably do a better job. You have to rip the entire interior apart to install it. I imagine the spray-on is popular because it is easier to apply. But everything will be a waste of time if your door/window seals aren't any good.
