I'm alright with wiring, these trucks are simple compared to my BMW, also I find aftermarket parts to be MUCH cheaper, which is a plus. I want Fuel injection because I think that they are much better engines and they get better gas milage and most of them will be in much better shape.
Depends on the money you have or are willing to spend, the aftermarket injection systems like the Holley Projection are much more friendly for a project such as yours. They run about $600. For fuel injection, the trans was usually an AOD or the later OD version. It can be made to run with a C6 if you want it to, but the C6 never had lockup.
Why not run a 351W with a Quadrajet or some simliar carb? Smaller primaries which allow you to get that all-important mileage, with secondaries to rip of some hellish power. You say you're familiar with the wiring and can manage it..just remember your'e also going to likely want to move to a Mass Airflow Sensor-based system so you can do your mods as well. Means more wiring. You'll likely need a custom burned chip at some point as well, or want one at least.
As far as the 302 vs 300 debate...I own both. My 302 did its best with a horse trailer loaded with my uncle's house...and made me kinda wish for hte 300's grunt - but BOTH would have had to downshift. And luckily, the 302 didn't mind being wound up in 3rd gear as much, so it wasn't horrible. Both will do you fine..and if you're moving alot of weight - you should have gotten a bigger engine anyways =).
The 351 ought to do you fine. You might ought to find what is in there right now though. FE, 351, 460, etc.
Actually I do know what was in there, I guess I was thinking too hard, it is a 360. I know carbs would be much easier but I really want the modern EFI.
Get an early 90's van, with the 351, you'll want either a E150 with the rv/tow package, or an E250. The 351s in them were some of the strongest (I know as I owned one.) Mine was an odd ball though and I've seen a couple others like it.... Same engine. It isn't MAF but makes about 250hp at 165k miles.
Have you thought about putting fuel injection on the FE? A simple rebuild and a Holley TBI fuel injection system are all you need. I have the Holley system on my 360 (soon to be 390) and it works great.
