The best grits are those that are stone ground and have to be cooked a long time. Instant grits are good, but not nearly as good as the all natural, stone ground grits.
The absolute BEST thing with grits is butter, biscuits and PURE sorgham syrup.
I can't seem to find any but the "quick grits" around the Tidewater area. I would love to find some "real" grits. The "quick grits" aren't bad, but they are not as good as the ones my momma used to make. As for those "instant grits" - sad stuff sort of reminds one of something like grits when you can't have the real thing. Like "instant hot cocoa".
But I've never been one for putting sweet stuff in my grits. Salt, pepper & butter. Love them with eggs & scrapple.
I once explained to a bunch of Brits I was chatting with about how grits are made - soaking the corn in lye first to get the hominy - at which point they asked what "lye" was. Once I explained and they said "caustic soda? The same stuff you clean drains with?" And after I agreed but assured them it was a very weak solution they stated that I had just confirmed that all "Yanks" were crazy - at which point in time I had that old discussion about calling a Virginia Gent. a "yank" is a bit offensive.
For those of you west of the Rockies, don't base an opinion on this "Albers" junk we get in California. I have my aunt ship me the real thing from Georgia twice a year.

Many people that I come across who hate grits prepared them similar to oatmeal. Since its corn I always had them like a piece of corn on the cob. Butter, salt and pepper and they are yummy.
