Don't know how to find out how many but from what I understand it's not a lot.
Sorry about the short speak, EGR is exhaust gas recirculation, if you have it there is a silver disc looking thing on the back of the carburetor. The disc thing is attached to a spacer plate that is in-between the base of the carburetor and the intake manifold. Cats is for catalytic converters, I think you would only have one. It looks sort of like a muffler with a shield plate wrapped around it. It is closest to the engine and then you would have a regular muffler located farther downstream.
Well I would suggest an upgrade with the carburetor, intake manifold, camshaft and headers. You can probably pass the sniffer test but I don't know if you'll fail the visual inspection if you have headers and no EGR, maybe ask your mechanic first. If headers are ok, then you're gonna need two catalytic convertors, one for each side. I'd tell your mechanic what your plans are and maybe he can steer you into what you can and can't change to pass smog, that would be my biggest concern before beginning. If your engine does have EGR than you're hosed on the intake because there is no aftermarket intake for the FE that has provisions for EGR. Don't know how things are in Texas but here in California they'll fail you on the visual inspection for the most lamest things.
