Basically, probably won't hurt your engine, but will hurt the MPG's (because of the computer controls)
It is a common "in the field" fis if a stat locks up. But I would go ahead and put one back in.

Running without a thermostat will increase the wear rates in your engine dramatically. The wear rates double for every 10F under 180. The straight six will show higher cylinder bore wear anyway in the #1 cylinder due to coolant circulation patterns. Plus, as has been mentioned before, it will mess with the computer controls and your fuel consumption will increase. Engine efficiency also goes down so your fuel consumption goes up even without the computer messing with it. It takes more throttle to move the truck.
