gear oil
I bought one of those neat chrome differential covers. Here is the question I heard to stray away from the 75w-140. It has to do with not absorbing water?? anyway should I use a 75w-90w gear oil instead????? and do I need to buy a gasket, I heard just use some of that blue sealant.

This question is prolly better answered in the Oil and Lubrication Forum, but that's ok.
I don't know where you've heard this from, but it sounds like it may have come from one of those checkout commandos at the local Autozone.
Absolutely stick with the 75-140 oil, as I've learned the hard way that the 80-90 leaks like water in a strainer at operation temps in the newer ford rears.
That little mistake I made almost cost me my rearend, but luckily I caught it soon enough and it only cost me a set of rear brake pads and 3 seals (pinion seal and axel seals).
Plain ole RTV is all you need to seal the rear end up, but make sure you scrape all the old stuff off, and let the diff set for an hour after you bolt up the new cover, before you put fresh oil in.
