I'm assuming that you have a trip computer that estimates the MPG. If this is in fact the case and you didn't turn the truck off while filling, yes it will take forever to update. Turn the ignition off and voila it will show a true reading.
If you put less than 6 or 7 gallons into the tank, the guage will react slowly. Greater quantity fill-ups will show more quickly. Expedition characteristic.
Rickz96 hit the nail on the head. I've left mine running a few times while fueling and the gauge didn't register for a long time. Turn if off and back on and there goes the needle.
