I am a F100 newbie. However, my background has always been sports cars which either has no power steering or ones that have decreasing assist as speed increases.
What I mean by over-assisted is that whether you are at slow speeds or at freeway speeds, the power steering provides a lot of assist. This provides no steering feedback to the driver.
As to what type of power steering I have, I don't know. Unfortunately, I bought the truck from a guy who had all the work done by different shops. While the work appears to be good quality, he has no idea as to what the source for the parts are.
I will begin working on the truck in May and I will have to do some research into what is actually installed.
Sounds like it could be as simple as running the wrong power steering pump. If you could identify what kind of steering box you have and what kind of PS pump we might be able to help. For example, I know from other posts on here that a GM power steering pump will over assist a Mopar steering box. Are you in a position to take any pictures of your set up? Is there any way to contact the previous owner and find out where the work was done? I'd like to help, but I have nothing to go on...
