headers and exhaust size
when I recently got my dual exhaust put on, they used 2 1/4 pipe because they said thats all that was coming out of the manifolds. Is that going to be large enough when I get some headers or will it be too limiting?

What size engine, and what RPM do you plan to run. In other words, if you have a stock 360/390 and 5500 rpm then you'll be OK. If you have a beefed up engine and need 6500 rpm then you MAY want a bigger pipe. My suggestion is get the headers, use the existing pipe, and see if it does what you want.
