Oysters, yum is right. Where I'm from (Southern East Coast, y'all) we get them fresh out of the water and steam them over an outdoor fireplace. From mud to belly in less than 2 hours.
Just had our annual oyster roast down there over the holidays, I think I ate a bushel myself. But the old saying about beer and oysters being an aphrodisiac is untrue! All I ever got was full and drunk.
As long as I know where they're from, I'll eat 'em raw too.
To v10klzz71s right on!!! Nothing like fresh La seafood. Bout time for some crawfish. I go through withdrawals living in Georgia. It makes me sick to see crawfish and shrimp at these resturants boiled in water w/o salt and crab boil. It's on the verge of being a mortal sin. It's tough being a transplanted coonass.

YEP, we take it for granted till we move somewhere else.I lived in Odessa, Texas for 3 yrs and had serious withdrawals.At my camp there is a nice size oyster bed under my dock,yumm.I love this time of the year with a lot of low tides they are easy to get to.Crawfish season is almost here!!
Only time I would eat raw oysters was while in the Navy, on friday nights, at our poker parties, and well oiled, so to speak. We used to buy them for $3 a bushel!!
Now, as for Rocky Mountain oysters, buffalo the best. But then again, it sort of seems sacrilegious to me.....

I had visions of being stopped by some trooper and having my ice chests confiscated. luckily I made it back to Georgia without incident. Have you ever had any jack millers or pigstand bbq sauce? I brought some back here for my boss, now he's ordering over the net a case at a time. Nothing else like it around here.

Reminds me of a good, easy recipe from my friend:
Take a muffin or cupcake tine and line each cup with a slice of deli ham, leaving some of the ham overlapping outside the cup. Put one oyster (shucked, please!) inside each cup and top with a pat of butter. Wrap the ham up to cover it and stick a toothpick in it to hold it together. Do all your cups like this and then bake in the oven- it doesn't take too long at 350-375 or thereabouts. You'll wanna eat the whole tray! These are great appetizers for company, sports games on tv, whatever. Depending on what type ham you use, this could also be a great low-carb meal.
