A few cleaned habaneros
Lemon Juice (for fish sauces)
BEER if you want that in it...
Various wines
FRESH Cilantro
Fresh tomatilloes (it makes a milder sauce)
For salsa use cleaned onions, some shallots, tomatoes, cilantro (lots of it, and it must be fresh), and whatever other herbs you like. Vary the salt to taste, and think about using "LITE SALT" because it has a lot of potassium in it which is good to have.
Those who don't disagree with carrots can add them too, and you will most likely find several slices of them in the can with the peppers. It mellows them.

lol i remember that, when I was younger, my cuz used to bring them home for me when he visited, i loved how the food cooked lol!
A 1/2 cup tabasco sauce and a spoonfull of margaine makes a great hotwing sauce. Deep fry the wings, add some salt and cover liberally in the sauce. Let it sit about 5 min untill the sauce hardens just a bit, then enjoy
GreyWolf--Tabasco isn't made from jalapenos, or habaneros, but instead it is made from, well, the Tabasco pepper. Vicious little bugger. NEVER rub your face after touching the pepper plant...never mind the pepper itself! Ask me how i know...

I know about tabasco peppers, believe you me. I've raised a lot of different pepper bushes over the years, and YEAH! Be careful what you touch after you handle them.
Some parts can feel like they are going to burn right off...
Especially some parts.
The real beauty of tabasco sauce is that in my mind I consider it the epitome of Louisianna hot sauces. That same vinegar flavor that it has is something I associate with that area.
Jalapeno based sauces are more of a south western deal, and plain old red pepper sauce is, well.. plain old hot sauce.

Try that with straight Popeye's spicy seasoning! It's enough to make you cry!
Those little bottles of tabasco in MREs are still there. ther reason they are in those bottles is marketing. All the GIs and civilians who eat MREs will remember that little bottle of Tabasco in the familiar bottle. I guess it is a visual comfort and if you like Tabasco, a comfort food.

I like the recipe to make your own Jalapeno sauce, gonna make some today. Also going to make some Habanero pepper oil this summer to keep my dog from eating all my drip irrigation hoses.
Regular or Hab, depending on the food. I have a bottle of Tabasco Regular in each of my trucks for when I eat out... and one in my lunchbox for work... plus a bottle of Reg and Hab sauce (along with a few other varieties) in my kitchen. I use it on everything from eggs to pizza to cheeseburgers.
